From Chili to Stroganoff, it takes just an hour — or less — to prepare these hearty meals made with ground beef.

Simple Cincinnati Chili


This is a simple recipe without a long list of ingredients, but it produces a rich, satisfying chili. I love this chili better than regular chili!!!

Ingredients

Directions

  1. Cook ground beef in large saucepan until no longer pink; drain.
  2. Add chili seasoning, cinnamon, beans and tomato sauce.
  3. Add water to bring to correct consistency.
  4. Bring to a boil.
  5. Reduce heat and simmer 10 minutes.
  6. Serve over spaghetti, topped with cheddar and onions.

Hamburger Stroganoff

Ingredients

Directions

  1. Brown beef in large skillet.
  2. Add onions and cook until onions are translucent.
  3. Drain grease.
  4. Stir in condensed soup, then garlic powder, salt, and pepper.
  5. Allow to simmer until all other parts of meal are prepared.
  6. Minutes before it's time to serve, stir in the sour cream completely and heat through.
  7. Serve over egg noodles.

Salisbury Steak

This is the perfect dinner for 2.  Double the recipe if you choose to feed 4.

Ingredients

Directions

  1. In a bowl, whisk the egg and milk.
  2. Add bread crumbs, 1 tablespoon gravy mix and onion.
  3. Crumble beef over mixture and mix well.
  4. Shape into two patties, about 3/4 inches thick.
  5. Broil 3-4 inches from the heat for 6-7 minutes on each side or until meat is no longer pink and a meat thermometer reads 160°.
  6. Place the remaining gravy mix in a small saucepan; stir in the water and mustard. Bring to a boil; cook and stir until thickened. Serve over patties.

 Meatballs and Gravy-Alabama style

Mama Mia, that's a versatile meatball!

There is more to meatballs than just serving them with spaghetti, or sticking a toothpick in them and serving them as an appetizer.  Meatballs are a versatile and economical main course.

Meatballs and Gravy-Alabama style

For the meatballs:
1 pound ground chuck
1 pound Italian sausage, either hot or sweet
1 teaspoon chopped garlic
2 tablespoons A-1 sauce
Seasoned salt and pepper to taste

Mix all of the ingredients together thoroughly.  Shape into about 1-1/2 inch size meatballs.  Place in a 350 degree preheated oven for 15 minutes, or until meatballs are done.  Remove the meatballs from the oven and drain; then place on paper towels to absorb any grease.

Mushroom Gravy
1 can Campbells  Golden  Mushroom soup
1 can Campbells Cream of Mushroom soup
1 large onion, sliced thinly
1 red pepper, sliced thinly
1 green pepper, sliced thinly
1 yellow pepper, sliced thinly
1/2 soup can white wine (can substitute chicken stock)
1/2 soup can water
1 tablespoon butter

On a saucepan, saute onions and peppers in butter until onions are translucent.  Mix the soups together along with the water and the wine.  Pour this over the vegetables and cook for 10-15 minutes on low or until the gravy is heated.
Pour mushroom gravy over meatballs and serve on rice, thin spaghetti, or mashed potatoes.

Pizza Burgers

ProvoloneProvolone (Photo credit: Wikipedia)Pizza burgers are usually kid's favorites, but by adding spices and cheese top the meat and serving them on an English muffins the adults will love them as well.

Grilled Pizza Burgers

1 egg, lightly beaten
2/3 cup grated Parmesan cheese
1/2 cup chopped onion
1/4 cup minced fresh parsley
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
3/4 teaspoon dried rosemary, crushed
3/4 teaspoon pepper
1 pound ground beef
4 slices provolone cheese
4 English muffins, split and toasted
1/2 cup pizza sauce

In a large bowl, combine the first eight ingredients.  Crumble beef over mixture and mix well.  Shape into 4 patties.
Grill burgers, covered, over medium heat for 5-7 minutes on each side. or until a meat thermometer reads 160 degrees and juices run clear.  Top burgers with cheese; cover and grill 2-3 minutes longer or until cheese is melted.  Serve on muffins with pizza sauce.

Parkway Hamburgers

Here is a favorite Burger recipoe of mine I found many years ago.

Parkway Hamburgers

1-1/2 pounds ground beef
2 teaspoons prepared mustard
1 dash hot sauce
2 teaspoons Heinz 57 steak sauce
1 teaspoon salt
2 teaspoons horseradish
1 clove garlic, minced
2 teaspoons onion, minced
2 teaspoons Worchestershire sauce
3 tablespoons Chili sauce

Mix all ingredients and let stand, refrigerated, for 12 hours. Form into patties  Place in a skillet and brown.  Be sure to msoak up the bun in the cooking ":juice".
