Marshmallow Whipped Cheesecake







 

Marshmallow Whipped Cheesecake


Graham Cracker Crust:
40 squares of graham crackers (crushed)
1/2 cup sugar
1/2 cup butter or margarine (melted)

Mix above ingredients. Press into top and sides of 9 x 13' greased pan. Reserve 1/2 cup for top.

Filling:
10 1/2 oz. large marshmallows (40 marshmallows)
3/4 cup milk
2 - 8-oz. packages of cream cheese
12-oz. Container of fat-free Cool Whip

Melt marshmallows and milk over low heat. Beat cream cheese; add marshmallow mixture. Cool. Fold in Cool Whip. Spread into crust and sprinkle with remaining graham cracker crust. Refrigerate until set.

Chicken Vegetable Bake










"

This was SO good!!" 4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix* and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 houror until potatoes are done and chicken juices run clear.
* I was out of Italian dressing mix, so I used Caesar dressing mix.It worked just fine and tasted really good. I added a little chicken broth too.

Pepper Jack Meat Loaf





Pepper Jack Meat Loaf

1 pound ground beef, turkey or chicken
1 cup celery, diced
½ cup onion, diced
1 cup oatmeal or crumbled saltine crackers
2 eggs
2 cups pepper jack cheese shredded ( or your favorite cheese)
¼ cup ketchup
1/8 teaspoon chili powder
Salt and pepper

Preheat oven to 400 degrees F. Grease a loaf pan.

Mix meat, celery, onion, oatmeal or crackers, eggs together well. Press half of the meat mixture into prepared loaf pan. Place cheese over meat mixture. Top with remaining meat mixture and press down to seal. Spread ketchup over top of meat loaf…sprinkle with chili powder ( or not), salt and pepper.

Bake, covered lightly with foil, for 30 minutes.

Increase oven temperature to 425 degrees F, remove cover and continue to bake for 20 minutes or until edges are bubbling and knife inserted in center comes out clean.
Let sit for 5 minutes then slice and serve.

Loaded Cauliflower Casserole











Great for Low Carbers

Just like mac and cheese without the pasta
2 lbs cauliflower florets
8 oz shredded sharp cheddar cheese, divided
8 oz shredded Monterrey Jack cheese, divided
8 oz block cream cheese, softened
4 tablespoons heavy cream
2 bunches green onions, sliced (1 1/2 cups)
6 sliced bacon, cooked and crumbled
1 clove garlic, grated
Salt & pepper to taste

Preheat oven to 350 degrees.
Steam cauliflower florets until tender.
While cauliflower steams, cream together 6 oz of the shredded cheddar, 6 oz of the Monterrey Jack, cream cheese, and heavy cream.
Stir in sliced green onions, chopped bacon, and garlic.
Set aside.
Drain any liquid from steamed cauliflower and add to cheese mixture.
Stir cauliflower and cheese mixture together.
Taste for seasoning, and add as necessary.
If you want a finer texture, give a few mashes with the potato masher.
Pour into a 2-3 quart casserole and sprinkle on remaining cheddar and Monterrey Jack cheese.
Cover dish with foil and bake for 25 minutes; remove foil and continue to bake until cheese is brown and bubbly.

Vidalia Onion Bacon Pie



It’s the sweet season of Georgia-grown Vidalia onions. Squattier than their kin, onions labeled Vidalias are unique to Georgia and may only be grown in certain parts of a 20-county area in the southeastern part of the state. Due to the soil and the climate, the onions are sweeter even when raw, making them particularly suited to dishes with smoky and salty flavors. This also makes them great raw in salads.

Vidalia Onion Bacon Pie


  • Yield 8 servings
Caramelized onions, bacon and cheese fill this hearty quiche.

Ingredients

Crust:
Cooking spray
1/2 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
2 tablespoons butter
2 to 4 tablespoons ice water
Filling:
1 tablespoon butter
3 medium Vidalia or sweet onions, slivered
2 eggs
1/2 cup half-and-half
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper, plus more for top
1 cup (4-ounces) shredded white Cheddar cheese
1/2 cup corn kernels, fresh or frozen
4 slices thick, smoky-style bacon, cooked and chopped

Instructions

  1. To prepare crust, coat a 9-inch deep-dish pie plate with cooking spray.
  2. Place cornmeal, flour, baking powder and salt in the bowl of a food processor fitted with a pastry cutter blade; pulse to combine. Add egg and butter; pulse until mixed. Add water, 1 tablespoon at a time, until a dough ball forms. This will form a sticky mass of dough. Press into pan. If the dough is too sticky, add a little cornmeal.
  3. Preheat oven to 350F.
  4. To prepare filling, melt butter in a large skillet over medium-high heat. Add onions and sauté 30 minutes, stirring occasionally, until lightly browned. Drain if necessary.
  5. Combine eggs, half-and-half, salt and pepper in a bowl. Whisk well. On bottom of pie, sprinkle half the shredded cheese. Top with corn kernels,  onions and bacon. Pour egg mixture over top. Top with remaining cheese and freshly ground black pepper.
  6. Bake 40 minutes, until top is set and browned.
P.S.

Cut a thick slice of raw Vidalia Onion to put on your grilled hamburger too.  Yumm

Zucchini Onion Pie

Two typical ZucchiniTwo typical Zucchini (Photo credit: Wikipedia)"The Zucchini are coming, the Zucchini are coming"  I used to live in a neighborhood where everybody had a garden, and everybody planted zucchini. When the zucchini became ready to pick, and we all know zucchini is as prolific as a pair of mating rabbits, if you did not lock your car at night, in the morning your front seat was filled with zucchini.
If that happens to you, use the following recipe to use up some zucchini.

Zucchini Onion Pie

3 large eggs
1 cup grated Parmesan chewese
1/2 cup
Canola oil
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/4 teaspoon salt
3 cups sliced zucchiini
1 cup biscuit/baking mix such as Bisquick
1 small onion chopped.

In a large bowl, whisk the first 7 (seven) ingredients.  Stir in the zucchini, baking mix and onion.  Pour into a greased 9-inch deep-dish pie plate.  Bake at 350 degrees for 25-35 minutes or until lightlybrowned.
Serves six.

Mexican Skillet Rice

I made it and it is really good as a side dish to tacos, enchiladas of any other of your Mexican favorites, and it only take 30 minutes to make.

Mexican Skillet Rice

1 large egg, beaten
1 pound chicken tenderloins, chopped
1 small onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
2 cups cooked Jasmine or long grain rice
1 can (15 ounces) black beans, drained and rinsed
1 can (11 ounces) Mexicorn, drained
1 jar (7ounces) roasted sweet red peppers, drained and sliced
1 jar (8 ounces) taco sauce
2 green onions, chopped
1/4 cup minced fresh cilantro

In a large skillet coated with cooking spray, cook and stir egg over medium heat until set.  Remove and set aside.
In the same skillet, stir fry chicken and onion in oil until chicken is no longer pink.  Add garlic; cook i minute longer.  Stir in rice, beans, Mixicorn, peppers, taco sauce and green onions; heat through.  Stir in reserved egg.  Sprinkle with Cilantro.

Kugeli Potatoes

Potato cultivarsImage via WikipediaI LOVE church cookbooks.  The recipes you usually find there is my kind of cooking.  The following is similar to potato Kugel (or Pudding).  I found it in the First Presbyterian Church  Sesquicentennial Cookbook from 1986.

Kugeli Potatoes
6-8 potatoes, grated*
2 eggs, well beaten
6 tablespoons butter (melted)
3/4's of a small onion, grated
1 cup hot milk
2-1/2 teaspoons salt
Mix all ingredients in a large bowl, stirring well to combine.  Place in a square 8 inch x 8 inch pan that has been sprayed with cooking spray and bake in a preheated 350 degree oven for about 1 hour and 15 minutes.
* Grate potatoes into a bowl of cold water to prevent them from turning dark, and then squeeze dry using a kitchen towel)

Potato Puff

Whisking egg whitesImage via WikipediaI've been making this recipes for many years.  It looks fancy, but is very easy to prepare.
It puffs up like a soufle', but will deflate very quickly so serve it straight from the oven so it looks it's best. 

Potato Puff
1-Box Instant Mashed Potato for 8 servings

1-cup cottage cheese

1-cup sour cream

¼ cup green onions, thinly sliced

1 (2-ounce) jar pimentos, drained and chopped

2 teaspoons salt

1 clove garlic, minced

3 eggs, separated

2 tablespoons butter



Prepare mashed potatoes according to package directions using an electric mixer. Add cottage cheese, sour cream, onion, pimento and egg yolks. Beat until fluffy. Beat egg whites until stiff. Fold egg whites into potato mixture. Turn into a buttered 1-1/2 quart casserole. Dot with butter. Bake in a preheated 350-degree oven for 1 hour.

Bill Knapp's Au Gratin Potatoes

Velveeta CheeseImage via WikipediaThose of you located in Michigan and Florida will remember Bill Knapp's Resturants.  They were popular for the free chocolaste cake they gave you on your birthday, plus your discount equal to the number of years you were old. (50 years olds = 50% discount).  That's probably a contributing factor for why they had to close the Florida stores. (80 years old=80% discount). OMG.

My favorite meal at Bill Knapp's was their Ham Croquettes and Au Gratin Pototoes.  Here is a "copy cat" recipe I came across that comes REAL close.

Bill Knapp's Au Gratin Potatoes

6 cups potatoes- diced, boiled til tender, and chilled
2 cups milk
1/2 cup butter
1/2 teaspoon salt
1/4 cup all purpose flour
1 teaspoon sweet paprika
1/4 teaspoon black pepper
1 teaspoon instant chicken bouillon granules
6 ounces Velveeta cheese

Prepare potatoes.  Melt butter in a large saucepan.  Add flour and blend. (you are making a roux, so after mixing, cook a few minutes to get the flour taste out of the roux)
Gradually add the milk and cook until thickened.  If it gets too thick, add a little more milk.  Add the remaining ingredients and stir until cheese melts.  Add potatoes and stir well.  Pour into a greased casserole dish.  Bake, uncovered, at 350 degrees for 25-30 minutes or until top is browned.
For best results, use whole milk and real butter.  No substitutes.  Can top with buttered bread crumbs if desired.

New England Baked Beans

White beansImage via WikipediaI finally bought a Bean Pot.  Always wanted one, and when I found one on sale I could not resist.  Scoured many baked bean recipes and this is the one I selected.  Learned alot on my first bean outing.  Overnight soak on dry beans work better than the "quick soak" method.  Sort em, cook em for a couple hours, let them stand overnight, and cook em again.  MAKE SURE THEY ARE TENDER BEFORE YOU PUT EM IN THE BEAN POT.  They will not soften that much more while baking.  All you will accomplish by baking longer is the risk of scorching your sauce.  So, again, be sure the beans are soft enough before you begin.

Boston Baked Beans

1 pound dried Great Northern Beans
1/2 pound thick sliced bacon strips, chopped
2 large onions, chopped
3 garlic cloves, minced
2 cups ketchup
1-1/2 cups packed dark brown sugar
1/3 cup molasses
1/3 cup maple syrup
1/4 cup Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Sort beans and rinse with cold water.  Place beans in a Dutch Oven.  add enough water to cover by 2 inches.  Bring to a boil for 2 minutes.  Remove from heat; cover and let stand for one hour or until beans are softened.  Or let set overnight. Drain and rinse beans, discarding liquid.  Return beans to Dutch oven; add 6 cups of water.  Bring to a boil.  Reduce heat and simmer for 1 hour or until beans are tender.
In a large skillet, cook bacon over medium heat until crisp.  Remove to paper towels with a slotted spoon; drain, reserving 2 tablespoons of the drippings.  Saute onions in drippings until tender.  Add garlic and cook 1 minute longer.  Stir in remaining ingredients.
Drain beans, reserving the cooking liquid; place in a un-greased 3 quart cooking pot or bean pot.  Stir in the onion mixture and bacon.  Cover and bake at 300 degrees for 2-1/2 hours or until beans are tender and have reached the desired consistency, stirring about every 30 minutes.  Add reserved cooking liquid as needed.

Rice Krispie Sweet Potato Casserole

Whenever we had a potluck at work for a Holiday, this is the recipe everyone always asked me to make.
It is not "gloopie" like the usual marshmallow topped sweet potatoes usually are.  It could almost be eaten as a dessert.  I don't like sweet potatoes,but I like this!

Rice Krispie Sweet Potato Casserole



3 cups mashed, cooked sweet potatoes, or 1 large can and 1 small can store bought sweet potatoes, drained, to equal 3 cups.

1 cup granulated sugar

1/2 cup melted butter

2 eggs, well beaten

1 teaspoon vanilla

1/3 cup milk

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

Combine all ingredients and spoon into a greased casserole dish.



Topping:

2 cups Rice Krispies

1 cup chopped pecans

1-cup brown sugar

1 stick butter, melted



Combine all ingredients and spoon over casserole, and pack down slightly.

Bake for 20 minutes in a preheated 400-degree oven. Topping will be browned.

Onion Patties

This recipe also came out of my "Amish of St. Joseph County" Cookbook.  The onion patties tastes as good or better than regular onion rings and are easier and keep warm better.

Onion Patties




¾ cup flour

1-tablespoon sugar

1-tablespoon corn meal

2 teaspoons baking powder

1-teaspoon salt

2/3-cup milk

2-½ cups finely chopped onion



Mix dry ingredients together, and then add milk. Batter should be fairly thick. Add onions. Mix thoroughly. Drop by spoonfuls into hot oil. Flatten and brown on both sides.

Tastes just like fried onion rings and makes a great side dish with grilled steak.

Mock Crab Cakes

In my neighborhood this time of year you have to lock your car at night.  If you don't, you will find the front seat filled with zucchini.  Thefollowing recipe will help you if you forget to lock your car.

MOCK CRAB CAKES



2 cups zucchini peeled and grated (I never peel it)

1 cup seasoned bread crumbs

1 teaspoon Old Bay seasoning

1 egg beaten

1 tablespoon mayonnaise

butter flavored Crisco



Mix all ingredients together. Form mixture into patties and roll in more breadcrumbs. Fry patties in Crisco until golden brown.



Can serve as a vegetarian main dish by serving a marinara sauce over the top. Add a salad and some hard rolls for a complete meal.
